And second, why are NA and PDA plates incubated at 37 degrees Celsius and at room temperature, respectively?

I would like to do plate counts from food samples (fruit) for staphylococcus areus. I have CLED medium, but I find that the fungus within the sample grows as a lawn, making it difficult to determine plate counts.
Which medium would improve this?
