I have been scouring the web for the OLD Chili's Cadillac rice recipe (the one they quit serving a few years ago with the celery and corn in it). Can anyone tell me that recipe or snag an old employee willing to spill? I HATE the new recipe and want to make this at home.

I wish to cook it for my family but am concerned about the "caffiene" content for young children. Why is coffee used? And will it matter if I removed it? Is there something I can substitute it for? Here's the link to the recipe I wished to use...
