teriyaki

I'm making teriyaki grilled chicken tomorrow night for dinner, and I'm tired of the same old baked potato song and dance. My fiance is a picky eater, he won't eat: quinoa, any vegetable other than broccoli, risotto, or any kind of bean that isn't of the baked bean variety. Any suggestions?

So, I'm cooking tonight for a couple of friends and a girl that I wouldn't mind impressing. I usually make some Thai Pineapple Fried Rice and put Teriyaki Chicken and Steak in it. Very tasty stuff. Problem is, I don't have any white rice to cook. Any alternatives that work well with everything...
