answer: Jews don't "choose" Isaac. It was Isaac that Abraham was called to ALMOST sacrifice. The illegitimate Ishmael was gone, cast out with his mother. G-d said His eternal covenant with the Jews was through Isaac. Ishmael returned to help Isaac bury their father but faded into non-history after that - obvious since his monotheism died out and monotheism didn't come to the non-Jewish Arabic tribes until Mohammad got a lot wrong about Judaism and Christianity and created Islam.
