its not an anime but the first thing that came to my mind was As Told By Ginger and she has red hair.
and then when you said hamster i thought of Hamtaro and the girl in there has brown hair im almost positive but im not all so sure about her writing in a diary. though i do remember a picture or scene where she is writing in a journal or something.
