Anthropology, nutrition or botany major?

I've had my heart set on anthropology/archaeology for ages now, and it really is my dream to work in the field in a foreign country. But I know that jobs are horribly limited and pay is nearly minimum wage. I don't mind not having much money, but I need enough to at least get by. Nutrition has always interested me and I think I'd enjoy working as a nutritional expert, but it's still not my dream. I'd also be more likely to have enough money to not have to be overly concerned about what I spend and if I'll be able to pay the bills. I'd probably need a PhD for nutrition and I'd need at least a masters, more likely a PhD, for anthropology. Botany has always interested me (not agricultural farming... like, working with plants and discovering new species and genetically engineering mutations in them), but I don't know if I'd really like it. I hated biology in high school. I just really like botany, without the whole cell cycle concept. I'd also need at least a Master's for this one.

What should I do? The major that will give me financial stability nutritionn), the major that interests me, but I don't like certain aspects of it (botany), or the major that I've dreamt of doing all of my life but I'll have to deal with an extremely high possibility of unemployment (anthropology)?

I don't seem to be interested in the most marketable fields, do I?
