at a place like "Pho 95" or other places to eat pho..?

In Arlington, there is a place called Pho 95, that serves Pho with different parts of beef, and rice dishes, and other stuff. in the table, i always see the red rooster hot sauce..i recognize. what is that other one? it is black, dark sauce..sweet, not spicy..its good. it comes in a plastic bottle..
pho with the "rooster sauce and that black sauce" these come together..
what is that black sauce? looks like they make it or do they buy it? cause its used a lot for one person....
 
the black dark sauce is for the grilled foods of vietnamese..very good even in fried or grilled fish!
