Can I cancel Data Plan after a month (T-Mobile)?

My contract just finished. I am going to go with a new contract with T-Mobile and I got my eyes on couple of smartphones (since I will be getting a family plan). But these smartphones require a data plan. Is it possible for me to get the data plan but cancel it after a month or two and still be able to use the phone?.. Please help!
