can I use a cellphone bluetooth?

I have a jailbroken iPod touch with VOIP installed on it. To use the voip, you talk into a microphone (that you buy for $40) that plugs into the base of the iPod, and you listen through the earphones. I was wondering if I could use a Bluetooth dock adapter (motorola, jabra, etc.) on the iPod and a bluetooth headset for a cellphone to replace the mic and the earphones. Thanks.
