That's what airplane mode is for. You can use your phone in airplane mode once the cabin crew or the captain announces it's okay or usually when the seat belt sign is turned off. Some airlines also offer wifi these days, in which case you may be able to use your phone for applications other than just the mp3 player if you choose to pay for the service. Otherwise, you can almost always use your phone in airplane mode except during take-offs and landings when all electronics must be turned off.
