I have to boil meat in wine in an aluminum dish. is it toxic?
 
It's not toxic but I wouldn't do it. The acid in the wine (tartaric, acetic) will react with the aluminum and produce aluminum tartrate and acetate. Aluminum is not toxic; in fact some antacids contain aluminum hydroxide to neutralize excess stomach acid ( like malox), but these substances will contaminate the flavor. The best alternative would be a ceramic or cast iron porcelin coated pots and caseroles.
