What is your favorite recipe that uses chicken breasts (boneless, skinless, preferably)?
 
Chicken Francaise... It's one of my favorite foods. Here's a recipe: http://www.epicurious.com/recipes/food/views/Chicken-Francaise-108667 ... but I honestly don't even use a recipe anymore. I've found it tastes much better after a lot of fiddling with amounts. And sometimes I've even substituted white vinegar for white wine and had it come out amazingly tasty. Serve it with buttery linguine.
 
Chicken Breast Stew

Ingredients: Garlic, onion, carrots, potato, tomato, cabbage, 1 kilo of chicken breast, saba banana/pineapple tidbits, 4 cups of water, salt, pepper.

Mince garlic and onion. Cut carrots, potato and tomato. Put them all with the half kilo of chicken breast in a 4 cups of boiling water. Reduce the water to a fourth or til the chicken is cooked. Put in salt and pepper for a taste. Put the cut cabbage in the pot. Simmer for 5 minutes. Put in the saba banana or pineapple tidbits. Simmer for 5 more minutes.

Best with rice.

Boneless skinless chicken breasts
A can of diet coke
One cup ketchup
Half cup or so of BBQ sauce (it depends on your taste...I like lots of BBQ)

Combine in a skillet and bring to boil. Cover, and cook, stirring occasionally, until chicken is done.

It's nice and sweet/tangy. The sauce should get nice and thick. It's awesome!
 
Chicken Marsala is my fav way to have chicken.


Chicken Marsala

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 6

Ingredients


2 tsps. olive oil
1 medium onion, chopped
1-1/2 lbs. boneless skinless chicken breasts, pounded to 1/4 inch thickness
1 cup dry Marsala wine
3/4 cup chicken stock, low-fat, low-sodium
1 Tbsp. cornstarch, or arrowroot powder
salt and pepper, to taste

Instructions

In a large skillet over medium-high heat, heat the oil. Add the onion and sauté for 5 minutes. Add the chicken and cook on each side for 5 minutes. Add the wine and cook for about 4 minutes until the wine looks syrupy.

In a small cup, dissolve the cornstarch or arrowroot powder in the stock. Add to the chicken and cook until the sauce is thickened, about 2 minutes. Add salt and pepper to taste.
