Desired listening mode for 5.1 Dolby digital/DTS blu ray movie played on a 7.1...

...system? I have a PS3, Onkyo HT-SP908, full HDMI, and a wide assortment of Blu Ray DVD's. Thing is, many of the movies do not qualify for 7.1 PCM but do for DTS, Digital, and 5.1 PCM. My system has a mode that forces the mode to 7 speakers though. Just wondering if the sound quality would be better listed to the way the movies qualify it for or if I forced it to all 7 speakers?
