I used to hand wash my dishes so I'm not sure what the "cool dry" option does. Does it just make the dishes sit there, or is there some fan circulating air inside to help them dry out? I still prefer to hand wash my dishes anyway and I would like to leave the door open for air dry but my cat keeps trying to get in there.

This is an energy saving feature, which basically lets the dishes air dry. There is a fan to help remove the moisture from the air inside the dishwasher. This is a good option, it just takes longer for the dishes to dry.
A dishwasher does a better job disinfecting dishes because the water temp is much higher than you would be able to use when hand washing.
