you do not have to freeze the batter or cupcakes just bake them first then wrap them in glad wrap (or any plastic wrap) and then put the frosting on when you are going to serve them. (I reccomend making them the day before you serve them so they dont get stale) also i never tried this but i just thought of it if you put bread around the cupcakes it may prevent them from getting stale like it does with cake cause it works with cake so it might work with cupcakes :]
