breakfast- toast with peanut butter & cup of coffee
lunch- toast with light cream cheese & apple slice w/ peanut butter
dinner- 1/2 cup pilaf rice & water
 
No. I don't think you're consuming enough calories for starters. Secondly, you're missing vegetables and a lot of protein.
 
Breakfast: The toast would be great if it was all-natural whole grain; The same with the PB as long as it's all natural, it's good.

Lunch: The toast would be the same as breakfast. I don't think cream cheese in necessary. Try a protein like tofu, seitan, quinoa, veggie burger, etc. Why just one apple slice? The whole apple provides much more nutrients.

I don't know what was in the rice pilaf, but the rice is pretty much worthless if it was white. Brown rice is the whole rice and much better.

You are lacking calories, and fruits and veggies. It sounds as though you ate as much for one day as what I can eat in one meal.
 
you didn't eat enough and you did not get any vegetables, you had hardly any fruit or protein. basically your diet was all carbs. you made "good" choices with combining carbs with protein (toast and PB. apple and PB) but you did not have a decent amount of calories or variety in your diet.
