Ethanol Fermentation; Can you help me describe these trends?

-The specific gravity decreasing every day of ethanol fermentation

- The volume of gas emitted decreasing

-Sediment of yeast increasing (kind of straight forward but is there anything I should add?)

-Monosaccharide being present in the beginning but not the end

-Oxygen being present before. and CO2 being present later
