Im making hard boiled eggs right now (yummy) but I was also wondering if any of you had any special recipes you like using? Any cool tips on how to eat them?
make egg salad or deviled eggs...those are both good. sometimes i like them pickled too (with beet juice), but that takes a full day or more to achieve. i think most people just put salt on them, and i've also seen people put vinegar on them too.
Eggs:-Devilled Curried
8 large hard-boiled eggs
1/3 cup mayonnaise
2 tablespoons finely snipped spring onions
1 teaspoon curry powder
Salt
Freshly ground black pepper
Peel the eggs and cut them lengthwise in half.
Remove the yolks and place in a small bowl.
Mash the yolks until smooth and add the mayonnaise. Mix until a smooth paste forms.
Mix in the spring onions, curry powder, and salt and pepper to taste.
Spoon the mixture into the egg halves, or pipe using a pastry bag and star tip.
Cover and refrigerate for up to 8 hours before serving.

3. Eggs.
4. Potatoes. (salad)
1 Carrot.
2. Spring onions.
2T. Mayonnaise. (or a similar dressing if you wish)
Cook the potatoes until the are almost soft.
Cook the eggs until they are almost hard boiled.
Grate a small carrot.
Cut the firm part of the spring onions into 6mm rings.
Snip the green of the spring onion for garnish.
Allow potatoes to cool and cut in ½ or ¼ depending upon size.
Add carrot and spring onion and roughly mix.
Place dressing in another bowl.
Cut the tops off the eggs and scoop out of the shell, into add to mayonnaise.
Mix together (chopping the egg a little) and add to salad and mix.
Egg Sandwich

I Egg. (boiled, semi soft)
2 Slices of bread. (regular white optional)
Spread.
Snipped Chives or the green of spring onions.
(i) Boil the egg until the yolk is not quite set. Cut egg in half and scoop out the egg. Season with S&P (a little curry powder optional) and mash.
(ii) Spread bread with butter or margarine, then spread over the egg.
(iii) Sprinkle with the chives or spring onions, cover with the second slice of bread an cut into fingers or triangles.
If you get the egg cooked just right you will have a perfect moist sandwich that isn’t soggy, and will have a distinctive yolky taste
I find that it is better to place the egg in an eggcup so you don’t have the yolk all over the bench.
Eggs:- Scotch

1 pound bulk pork sausage
1 tablespoon fresh parsley -- chopped
1 tablespoon grated onion
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 hard-cooked eggs -- shelled
1/2 cup fine dry breadcrumbs
Combine sausage, parsley, onion, cinnamon and nutmeg; mix well. Divide sausage mixture into 4 portions; shape into patties. Place one egg atop each patty, shaping the sausage mixture around egg till completely covered. Roll each sausage-covered egg in breadcrumbs. Bake in a preheated 350 degree F. oven for 15-20 minutes until golden brown.
