I used to have a set of Carriers Kitchen part-works until they were stolen during a house move some years ago. One of the recipes was for roast goose stuffed with chopped potatoes, giblets, etc. I can't find this exact recipe in any of his other cookbooks. It's the stuffing, in particular, I'm interested in.
I'd be grateful if anyone can help.
