How do you drive a volkswagen jetta turbo 2003?

I won it at an auction and didn't know that it was a turbo and I just found out what turbo is now. Your probably gonna talk smack, but helping would be better. It's fun to drive, but I keep getting that big kick when I drive. How do I drive correctly? Do I press the gas and get my foot off it? That's what I've been doing and I get that big kick. It's cool, but it gets annoying. Is it suppose to be loud at the beginning too?
 
That big kick is the turbo, and that loud sound at the beginning is the turbo spooling up. It activates at a certain rpm but other than t hat its just like a naturally aspirated car. Keep your foot on the gas if you want the rpms to keep climbing, take your foot off if you want it to go down, simple as that.
