How does bluetooth/headsets work?

I just bought the HTC Rhyme. I want to get a bluetooth earpiece or headphones for it, so I can answers calls hands free. I am new to this technology, so if you could tell me how it works and how to use it that would be great! Also, what I need to look for when buying. I'm looking at eBay so links would be great, and more likely to earn those 10 points. Thanks:)
