How quickly do the EF tours move along?

I'm going on an EF tour to Greece and Italy in a couple of weeks. I'm debating whether I should bring multiple camera lenses with me or not. I am aware that we will be covering many landmarks each day. Will I have the time to spend changing lenses or will we have enough time to look around and take pictures as we please? Do we spend any time at each landmark NOT bound to a tour guide who is moving his own direction?

Not sure if this is the best place to ask, but maybe I'll get lucky :)
 
I went on an EF tour of Paris and everything was really fast paced. I would say bring one diverse lense unless your prepared to fall behind.
