Everytime this person argue with me on some issue. When eventually I proved the it was his mistake, he starts to switch the blame. Including:
a) changing the topic: Saying my temper is getting bad. something like that, or
b) saying he never said that or did that.

I am so tired of he way of "cheating". How do I deal with it?

don't argue, it'll not get you anywhere. focus on the solution of the problem, and if the other person tries to play the blaming game, don't fall for it - just say 'all I want is to find a solution' and ask them what they think should be done to achieve that. maintain strong and ignore every try to put the blame on you.

there's another side to it though: do you also try to place blame? avoid it, otherwise you will sound like a hypocrite.

give that person a taste of their own medicine
the key is to remain calm
just talk like a smart a*s but remain calm than that person is gonna be the 1 getting frustrated

and better yet smile the whole time...

or you can just tell that person to piss off and ignore or change the subject

I simply just say "You're right, you win." And try to remain calm. Most of the time they admit to being wrong after I try not to argue. People get competitive.
