how to cook stuffed pepper yams?

I am making something new: Red Bell Peppers Stuffed with yams & sweet potato.
( I am cooking it now so I will describe what I have planned.)
Does this sound right? And how long do I cook [stage 1]& [stage 2]
1-A. I put turkey bacon on the bottom of the aluminum pan to caramelize then I put the (potato mix on top of this.
1-B. I peeled 4 yams and 4 sweet potatoes
2. I put 3 yams and 3 sweet potatoes in a juicer ( didn’t have a proper food processor- and the Magic Bullet sucks ) OMG the juice from the yams was very tasty ( and I think it is healthy too!)
3. Then I chopped 1 yams and 1 sweet potatoes and then mixed that in a bowl
4. I boiled water in a pan and I put prechopped garlic in pan then I added EXTRA LIGHT in flavor Olive Oil and 2 TBSP of butter after most of the water evaporated. And then I put this in the bowl with the Potato mix. Then I added water to the pan to get the rest of the garlic into the bowl. ( should I have used a tomato sauce?)
5. I placed this mixture on top of the turkey bacon in a Turkey baster aluminum pan
5B. I sprinkled salt sugar garlic powder and paprika on top.
6. Cook for 1 1/2 hour at 350 degrees covered. [stage 1]

Bell Pepper Preparation:
1. I cut the tops of 10 bell peppers ( Red Orange Yellow) and removed the insides and seeds and veiny flesh.

I will stuff the peppers with the cooked potato mix.

I made stove top stuffing to place/ layer around the peppers mix and I will put the leftover cooked potato/yam under and in the middle of the aluminum baking pan and shove the peppers into the cooked potato/yams. And bake for how long? [stage 2]
