How to help recently abused dog less flinchy?

So I got this dog, she used to be owned by a teen who made her fight, beg for food, starve, eat human food, pull him on his bike (scars on belly) and most of all, beaten. I can tell by feedin her pedigree chums, bathing her, walking her twice a day, buying her many toys and collars ect, that she is fitter, much nicer coat, happier, and has leg muscles. I couldn't be happier of what I have achieved from rescuing a 2 year old staffXpitbull. She has never shown hostility towards me or any of my family, when I tell her off she looks very sad.. She flinches a lot.. She pee's herself and runs and hides ect. How can I stop her from doing this? All I want for christmas is for her to stop being so scared of older people, and my older brother who is around the same age+height as her old owner..
