How to make cooked meat less chewy?

Every time we cook our meat it turns out very chewy how do we make it softer and less chewy? Also how Do we PROPERLY cook steaks medium rear?

it sounds to me like you over cooking it, and yes try medium rare make sure to use a thermometer to check the temp that its cooked to the right level of doneness.
 
try marinating in corn flour it tenderizes the meat really good for stir fries
 
Marinate, pound with meat tenderizer, high heat, 2-3 minutes per side.
