I would sautee it. I think that I would do it alone and freeze it in smaller icecubes so that you can mix it with other things. Like squash or something, just in case your baby doesn't like it or can't handle just the bell pepper on its own. I'd roast with a starchy vegetable to make a creamy texture. A pureed red pepper will be very watery and probably not taste too good on its own. Maybe mix with roasted potato and puree. Make sure you remove the skin if making for a baby starting solids.
