How to make this riddle into an equation for class!?

As I was going to St. Ives,
I met a man with seven wives,
Each wife had seven sacks,
each sack had seven cats,
Each cat has seven kits: kits, cats, sacks and wives,
How many were going to St. Ives?

I would like to put a different twist to this riddle. If we let x represent people and cats (including kittens), how would you represent the answer to this question – how many were NOT going to St. Ives? Also solve the equation for the number of people and cats.

7 wives
7*7=49 sacks
7*7*7=343 cats
7^4=2401 kits
------------- total not going to st Ives.

X=1+7+7^2+7^3+7^4=?
