So I have two characters having a conversation where they pretty much carry on their own conversations on top of one another, how exactly would I go about formatting this?

It seems too long to continue saying "He interjected" or "He interrupted". Any other ideas :)?

you don't need to write "he said, he interrupted" after everything, once people know who's talking. Like this:

Adam turned around, face red and furious "You said you'd never do this to me!"
"I didn't think I would ever have to!"Lisa cried, shaking. "You told me-"
"I don't care what I told you! What you need to realize is-"
"What? What do I need to realize?"

Well, the dialogue was horrible, I just hammered it out, but as you see, no need to keep writing "he interrupted"

"When I type that stuff I dont say anythi-"
"I just make them interrupt each other like thi-"
"SHUT U-"
"I was talking first!!!!!!!!"

Read David Mamet, he's brilliant at that. The best way to learn to do something is to read the greats!

I would maybe use lots of hyphens? Like:

"I think the weather today is beautiful-" Susan mused as she glanced out the window.

"-but then I told my sister about the cat-" Martha murmured as she wrung her hands.

"-it's a nice change from all that rain last week-" Susan continued over Martha.

"-and she got very, very angry-" Martha sighed finally, laying her palms on the table.
