Hi i am looking for a thick and creamy coleslaw like you get in sandwich shops in the uk not the runny style like kfc yuck! if anyone could help it would be really appreciated! Needing it for special event at the weekend

It all goes watery because cabbage weeps when mixed with salt. The longer the slaw sits, the more the cabbage weeps.
Any "creamy" slaw that is not watery has simply been stirred well before serving and probably a slotted spoon used to serve so any extra moisture drains back. they may even drain the slaw and redress it.
What you could do is dress the slaw absolutely last before serving.
