My question is, I know and understand what genital herpes are. However, does this mean that her entire body now has the simplex herpes virus 2 including the mouth region. She had no signs of sores around her mouth. What are the chances of myself catching the SHV2 virus?

Low chance if no sores, but yea, if she had "cold sores" those really are a form of and can be cause by herpes.
I dated a girl for over a year with herpes and we had an active sex life, but she monitored her "activity" well and I never caught herpes from her.

There are two types. She might have both and you can still get the virus, even without her having an outbreak.
I would keep your privates in your pants and not let just anyone touch it. The scare or the diseases are not worth having to tell someone what she told you. She should have told you to begin with, not after either.
When you meet someone, get to know them and become friends. Don't do anything physical. Keep your health and your sanity.

Unless she had visible signs of sores on her mouth, you are at NO risk of contracting Herpes. But I strongly suggest you do not have anymore contact with her. Herpes on the mouth (coldsores) are not usually the same strain virus as those of the genitals. Hope this helps.
