The first recipe sounds gross.. breakfast sausage? What?
Anyways, the best meatballs are simple meatballs. It combines 3 different ground meats, usually the following:
1/3rd lb ground beef
1/3rd lb ground pork
1/3rd lb ground veal or lamb
1/4 minced white onion
1/2 tbsp dried oregano
3 tbsp fresh parsley
1-2 eggs to bind.
Mix everything up in a bowl, do not over mix. Make meatballs around 1 inch in diameter. Brown up in a pan with canola oil (2 to 3 tbsp) on medium high heat. Then transfer to a baking dish or pan and heat at 350 degrees for 15 minutes in the oven.
-- eat, or add to a sauce. When adding to a sauce, you don't need to cook them more than a few minutes to warm them through.
