ok, well...there is a lot to answer here so i'll give it my best...
where are you coming from. a plane ticket to Hong Kong can be pretty expensive, but well worth it. I have been to HK 8 times and I love it there. I am coming from South Carolina and the tickets usually cost us between $1,200 and $1,500 per person for a round trip ticket.
Once you get to Hong Kong, you will want to stay at a nice, yet affordable place. I have always stayed at the YMCA in Kowloon, but now it has changed to a new hotel called "City View"...it is a very VERY nice place and pretty affordable, also there are TONS of places to visit with in walking distance of City View.

There's always Disney Land Hong Kong, which is a great place to visit. I suggest planning on spending a whole day there as you will probably want to do everything there, and the park is significantly smaller than Disneyworld in Florida, so it will be easy to see and do everything in one day. here is the website:http://park.hongkongdisneyland.com/hkdl/zh_HK/home/home?name=HomePage (which can be translated into english on the top right corner) that way you can check prices. If i remember correctly, it is about $55 US Dollars per person to get in. Also know that you must take the MTR (that's what they call their Subway trains) to Disneyland and that will cost maybe 10 USD.
i also suggest going up to the Peak, and ride the tram up. It is very nice and there is even a sky terrace up there where you can take some wonderful pictures. There are tons of shops and places to eat on the peak and you can look out and see the entire Victoria Harbor.

That's another place you should go, Victoria Harbor. There are many many photo opts there and tons of malls and stores to visit.

that should help you plan on where to go to see it. I went to the garden the same day i went up to the peak. I spent the morning at the garden and then lunch and the afternoon at the peak.
Because of the currency difference, it is easy to get carried away and spend too much money in Hong Kong. Things are definitely priced to sell and you will really want to buy EVERYTHING you can, haha. I suggest to remind your daughter that the fun and memories you share from visiting another culture are much more important than buying all kinds of stuff. However, if you want to find a nice place to buy cheap stuff, you need to go to the ladies market. If you just ask around, then ANYONE can tell you how to get here. BUT if you stay in City View, just go out the front and head towards KFC/Burger King, you will be able to see all the shops, then you will come up on a bunch of tents...that's the ladies market. They sell just about everything there, and all prices are negotiable. Don't feel bad negotiating with them because they don't feel bad when they triple the price just because you're a foreigner.
