if i take the blackberry bold 9780 Sim card out will it still work?

I just ordered a blackberry Bold 9780 on contract but the Sim that came with the phone is going to go to my mum and I'm going to keep the handset, so i was just wondering will the phone's apps & blackberry messenger still work if i put a different Sim in it? another thing is i want to buy a memory card for the phone but i am not sure if it comes with a built in memory card like the blackberry torch, and if it does come with a memory card how many MG or GB's is it and how many songs can it carry?
