If the human ear can only discern 22 kHz why are Blu-ray and HD-DVD

recorded in 192 kHz? Maybe I have my information wrong, but I was told that the human ear can only hear a sampling rate of up to 22,050 Hz and that CDs are recorded at 44,100 for fidelity. Why then are the new HD formats recorded at 192 kHz?
