When I make the Shrimp Tempura, and I try to separate the yolk, it doesn't work, even though I do exactly what it says. Can you guys help me out please?
not sure about that particular iphone thing, but the way I separate an egg is like this:
get 2 small bowls in which to place the whites and yolks, crack the egg carefully but thoroughly (preferably on a FLAT surface, not a corner as this drives bits of the shell into the egg)
holding it over your "whites" bowl, carefully split the shell, holding the halves facing up so that the yolk will not fall out yet.
the shell half that does not contain the yolk should have the white poured out and set the shell aside. holding one hand over the "whites" bowl, with very little space between the fingers (like you are trying to let sand sift through gradually), use the other hand to pour the yolk, and other white content, of the remaining half of the shell into your hand. let the white slide through your fingers into the bowl, and the yolk should remain in your hand. once all the white has drained through, you can then place the yolk into the other bowl.
Doing it this way reduces the risk of accidentally breaking the yolk on the sharp edges of the egg shell.
remember to wash your hands thoroughly after handling raw eggs.
