In the UFC, if Lesnar is the champ, why is MIR the Interim champ?

im really trying to understand the whole "interim" thing. can anyone explain it to me?
so , randy retired with the belt, nog-mir fought for the "new" belt because it was retired, randy came out of retirement, had not been ebaten, so was still champ, now there are 2 belts, lesnar beat randy for the "real" belt, and mir beat nog for the other belt, and now mir fights brock for the "only" belt... is that right? and to sum it up, if rany never reitrered he would ahve foguht nog or mir for the belt and there would only be one.... i guess... i just confused myself again......lol

you can be an interim champion only if the real champion is unable to defend the title in the case of Randy Couture he was unable to defend his title because he retired, so they gave it to Antonio Rodrigo Nogueira and he was beaten by Frank Mir
