Is there anywhere I can book a vacation with just a deposit?

I'd like to book two vacations, one for October and one for December and I was wondering if there's anywhere I can book them with just a deposit down? I've heard of people doing this but everywhere I've tried has wanted the entire cost of the vacation up front.
