Mexican restaurant white cheese sauce in Mexico?

In the ethnic cuisine section I keep seeing questions and comments about a "white cheese sauce" that people swear is served in every Mexican restaurant. In 25 years of eating in Mexican restaurants and homes from the US broder to the Guatemalan border, Sea off Cortez to the Carribean, Pacific Ocean to the Gulf of Mexico and pretty much all points in between I have never encountered any such thing. Do any of you Mexico hands know anything about this "white cheese sauce" and where it might be found?
