I have tried loads of recipes for BBQ sauce that mostly all include ketchup, worcestershire sauce, vinigar, liquid smoke etc...
The problem is whenever I cook the sauce and bring it to a boil and simmer like the recipe tells me to do, the ketchup always smells and tastes burnt, and the whole sauce dosent taste anything like BBQ sauce.
I really want to make a BBQ sauce the same as the one in the Hard Rock Cafe, and I have found a recipe that states to be a clone of that sauce, but when I make it it tastes nothing like it. What am I doing wrong?

I found two different ones for HRC sauces. One with chicken stock and the other is basically flavored ketchup. But, I think I might know what is going on. First, chose a sauce pot with the heaviest bottom that you have. This helps to dissipate heat over the whole bottom. Second lower your heat and take your time bringing it up to "boil". Third your not really going for a full rolling boil here. Your shooting for a simmer which means just a few bubbles every now and then. This is more then likely your problem is the heat factor. Finally, taste your sauce as you go. Don't wait until the end of cooking time and taste it then. It will probably need to come off the heat long before the cooking time given states. The low and slow technique applies to sauces too.
