protein content in RAW and COOKED vital wheat gluten?

hi please help!
i want to make HIGH protein bread, with AT LEAST 25G PROTEIN per slice/serving.

but if i make SEITAN with VITAL WHEAT GLUTEN, how will i measure the PROTEIN CONTENT? HOW MUCH PROTEIN WOULD BE IN EACH 50G SLICE OF SEITAN MADE WITH 100g RAW VWG = 73g protein?

bascially, my question is how will i convert raw VWG protein content to when it is cooked
