Question for experienced bread bakers.....?

I want to refrigerate or freeze unbaked bread and rolls. Tell me at what point should I do it and do I need to let ir rise again? For example, I use a bread machine dough cycle so when it comes out of there my recipe generally needs to be punched out, allowed to rest 10 or 15 mins. then shape and let rise 25 mins or so. When should I refrigerate or freeze, and then what method when ready to bake? Thank you in advance!
