In the 2009 film Sherlock Holmes and its sequel Sherlock Holmes: Game of Shadows, Sherlock mentally plans battles in his mind, move for move, on a number of occasions.

I want to know what you'd call someone who can do that, or what term you would use for doing that.
 
It is called: Astute Observation. Meaning that the person is intelligent and has a good insight in cases, treating them with logic.
