Does the police officer physically check the vin number ON the vehicle at a traffic stop or does he JUST ask for licence, title and registration?

in my experience they usually just ask 4 your licensce & registration. then they'll just run (check) your licensce plates & you to see if they have any "hits" on both.

they would only check VIN to make sure its not stolen

The VIN should be on your registration. The only reason a cop might check the actual VIN is if the car has been reported or he suspects the car is stolen.
