Welsh Cakes…. Anne Jones

2lb SR Flour, sifted
1 level teaspoon baking powder
2level teaspoons ground mixed spice
½ teaspoon salt.
8oz hard marg.
8oz lard.
12oz sugar
8oz currants
3 small or 2 large eggs.
Cream to mix. About 4 tablespoons usually.

Can you make welsh cakes with self raising flour instead of plain?
will they be alright?

After looking at the recipes, the only problem I can see using self raising instead of plain flour is the baking soda in the self raising. All of the recipes call for baking powder, no baking soda. Self raising flour has salt, baking powder and baking soda.

You could try it, cut the baking powder in half, leave out the salt and your Welsh Cakes will probably by very light and fluffy -- hope that's the way you like them.
