we're starting a BBQ restaurant, what size(#) hogs do i buy for my pit?

Living in central Ohio should i buy from local producers or the farm market? Where do i get my hogs processed? How many #'s of pulled pork can i expect from each? I want to use hickory to smoke the meat,where can i find a unlimited supply of hickory firewood? Can i buy a large supply of just ribs somewhere? where? I also need prices for all these things:wood,whole processed hogs, ribs for figuring a business plan
