what are the signs of a blown head and the head gasket?

I put my 2003 Chevy Impala on the machine for a diagnosis and they said i need new head gaskets and heads. The car was running hot. But I took it to someone else and they said to put new fans on the car and flush the antifreeze and put the red antifreeze in it I got that done yesterday and the car is not running hot anymore. Did they try to get me out of my money or what? Usually if the head and heads gaskets are gone the car will automatically run hot correct if the AC is not on?
