What can I make with the following ingredients / How can I cook them?

diced lamb (suitable for casserole, needs to be slow-cooked)
Vegetables: mushrooms, red pepper, carrot, onion, garlic
olive oil/sunflower oil

Want to serve with either rice or whole-wheat spaghetti

On a strict exclusion diet hence basic ingredients

Cook the lamb with the vegetables in a slow cooler like a croc pot. Maybe look up a recipe to thicken the excess liquid into a sauce? Then put it over brown rice.
 
Start by boiling the rice or spaghetti about 10 minutes, until tender.
Brown the lamb meat in hot oil with onions & garlic.
Slice the mushrooms, red pepper, carrots, etc.
Assemble the casserole, rice or spaghetti on the bottom.
Layer the meat & vegetables on top of rice.
Pour over a cup each of chicken stock & wine, or tomato sauce.
Sprinkle with bread-crumbs & Parmesan cheese.
Optionally sprinkle with dried or fresh Rosemary.
Bake in 400F oven for 30-40 minutes until bubbly & browned.
 
You've got all the ingredients for a delicious stew. Brown the lamb in some olive oil, then remove onto a plate. Dice up the carrots and onions, chop up the garlic, sautee them all in the same pan in a bit more olive oil. Season with salt (if allowed) and red pepper as you're sauteeing. Add the mushrooms and browned lamb. Add a can or two of beef or chicken or vegetable broth (or water, in a pinch), and any chopped or dried herbs that you are allowed, bring to a boil, then immediately turn down to low heat and let it barely simmer for at least 2 or 3 hours, partly covered. Stir occasionally to prevent scorching. You should have a nice rich stew! If the gravy seems too thin, remove as much of the eggies and meat and shrooms as you can, then poil down the broth to reduce it until you have a thicker consitency, then stir everything back in, and serve!
