what else can i do with the stuffing of stuffed bell peppers?

i made stuffed bell peppers today but i made too much of the filling. I dont want it to go to waste, what else can i do with the filling? i thought of chili beands but im still not sure.
 
Depends what you stuffed them with. Probably could use in an acorn squash. over the top of a baked potato.
 
Add tomato sauce, frozen or canned corn, kidney beans, diced green pepper to mixture, transfer to baking dish, sprinkle with grated cheddar cheese and bake.

Mix with canned diced tomatoes, refried beans, cheese and sour cream, use as filling for burritos or enchiladas.

Slow Cooker Cabbage Rolls

12 leaves cabbage
1 cup cooked white rice
1 egg, beaten
1/4 cup milk
1/4 cup minced onion
1 pound extra-lean ground beef, cooked
1 1/4 teaspoons salt
1 1/4 teaspoons ground black pepper
1 (8 ounce) can tomato sauce
1 tablespoon brown sugar
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce

Directions

Bring a large pot of water to a boil. Boil cabbage leaves 2 minutes; drain.

In large bowl, combine 1 cup cooked rice, egg, milk, onion, ground beef, salt, and pepper. Place about 1/4 cup of meat mixture in center of each cabbage leaf, and roll up, tucking in ends. Place rolls in slow cooker.

In a small bowl, mix together tomato sauce, brown sugar, lemon juice, and Worcestershire sauce. Pour over cabbage rolls.

Cover, and cook on Low 8 to 9 hours.

Cabbage Beef Rice Casserole

2 pounds ground beef
1 cup chopped onion
1 (29 ounce) can tomato sauce
3 1/2 pounds chopped cabbage
1 cup uncooked white rice
1 teaspoon salt
2 (14 ounce) cans beef broth


Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.

In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

Beef Rice Soup

1 pound ground beef
2 (14.5 ounce) cans diced tomatoes
1 cup frozen corn
2 cups cubed potatoes
2 carrots, chopped
1 onion, chopped
4 teaspoons salt
1/4 cup uncooked white rice
1/8 teaspoon ground black pepper
4 cups water or half chicken stock half water

Directions

In a large saucepan over medium heat, saute the ground beef for 5 minutes, or until browned. Drain the excess fat and add the tomatoes with liquid, corn, potatoes, carrots, onion, salt, rice, black pepper and water. Bring to a boil and reduce heat to low. Simmer for 1 hour and serve.

Stuffed Pepper Soup

2 pounds ground beef
1 green bell pepper, chopped
1/2 white onion, chopped
1 (29 ounce) can tomato sauce
1 (29 ounce) can diced tomatoes
2 cubes beef bouillon cube
1/4 cup packed brown sugar
2 teaspoons salt
1 teaspoon ground black pepper
1 tablespoon soy sauce
2 cups cooked white rice


Directions

In a Dutch oven brown beef over medium high heat. Drain off any fat.

Add the peppers and onion to the browned meat and saute for 3 minutes.

Stir in the tomato sauce, diced tomatoes with juice, bouillon cubes, brown sugar, salt, pepper and soy sauce. Reduce heat to low, cover and simmer for 30 to 45 minutes. Stir in rice and heat through.
 
roll them into meatballs and serve with brown gravy on noodles or mashed potatoes, or in a tomato sauce over spaghetti
 
Your first two answers are good ones. If you have enough, my suggestion is to shape it into a meatloaf and bake it to have for sandwiches.
