What is the correct pronunciation of Judaism?

Ju-day-ism is probably the correct pronunciation. Ju-dee-ism is the way they say it in east Texas.

It doesn't really matter but the long a sound is probably more correct. You would put the emphasis on the 2nd syllable. But if someone is used to putting the emphasis on the first syllable then the e sound is usually used.

There is a word, Judaic, that is definitely with a long a.
